Healthy Snacks

Craving sweets? Here are some sweet and delicious but still healthy snack ideas


Chia and Granola Berry Trifle




Blending yogurt, quark, almond butter, chia seeds, blueberries and raspberries 


Here I combined yogurt, quark, oats, blueberries, almond butter, raspberries, goji berries, chia seeds and blended those ingredients. Use as much yogurt, berries etc as you like. Pour the thick texture into a glass and cover it with 4-5 tbsp. of granola, at the end slice a half banana decorate it nicely on top of the granola and add some berries, nuts ( I used Brazil nuts) and your favorite fruits. Et voila, healthy breakfast/snack is done.


Overnight Chia Pomegranate Snack


This one is very easy, just put ca. 300 ml milk into a jar and add 5-6 tbsp of chia seeds and 1 tbsp of flax seeds. Close the jar and place it in the refrigerator over night. If the consistence is too thick the next day add either milk or yogurt and sprinkle it with pomegranates, coconut flakes and honey if you like.


Blueberry Buttermilk Muffins with Streusel




For 12 muffins you need:

250 g white whole wheat flour (use 70% flour and 30% oats to make them healthier)
100 g sugar (use less sugar or use honey instead, if you want a healthier version, even a mashed banana can replace sugar)
2 teaspoon baking powder
2 medium sized eggs
5 ml vanilla extract
150 ml buttermilk
3 g salt
120 ml butter vegetable oil 
250 g blueberries ( I added some raspberries as well)

Streusel:

15 g flour
25 g brown sugar
1/2 teaspoon cinnamon
30 g butter

Preheat the oven to 200°C. Stir the ingredients (besides the berries) into a large bowl and combine them until light and fluffy. Cover the blueberries in another pot with some flour so the dough won't become blue. Now fold in the berries. Spoon the mixture into the muffin pans. In a small bowl mix the streusel ingredients and mix until mixture resembles into crumbles. Sprinkle them on top of the unbakesd muffins. Bake for about 20 minutes and let them cool down....done :)


Coconut Snack


This is obviously not homemade, but super healthy. You can buy the Coyo yogurt in health shops as Revital or even Selfridges foodhall. It's super yummy and dairy free, furthermore it contains a lot of vitamins as it's made out of natural coconut milk. Coconut water is my favourite refreshing summer drink, it tastes amazing and is super healthy!
